Rock candy is simply crystallized white sugar, and while some consider this product to be chemically derived, the fact is that pure cane sugar is the source of all of our sweeteners. We have our suppliers create our Rock Whites by simply allowing our pure cane sugar syrups to dry and condense in a clean area. This means that the rock sugar is able to rest and age without undergoing further alteration, unlike the classic grained sugars. It is more raw and flavorful than other sugars, and it can look strikingly attractive in a classic sugar bowl.
