Rock Brown Sugar
Crystallization is a good way to prepare sugars. It is the natural result of drying pure sugar syrup. The sugars produced by large corporations are refined with calcium hydroxide, and in the process lose an element of flavor that pure cane sugar holds on to. Our Rock Brown Sugar is a fine example of the rich flavor that can be created with natural, organic materials. Molasses is simply the juice of the cane, and it is usually processed away to nothingness in factory production methods. Allowing molasses to coat pure cane sugar during crystallization creates an earthy brown look and taste.
