The Chinese province of Hangzhou is the home of Longjing Tea, or Dragon Well Tea. A member of the classic Chinese list of Famous Teas, Dragon Well can be very expensive, and is usually served to heads of state on their arrival in China. According to legend, the Emperor Qianlong was picking Dragon Well tea leaves when he heard that his mother was ill. He immediately scooped several handfuls into the sleeves of his gown, rushed to her side, and made her a healing brew from them. The leaves were pressed flat while folded in the Emperor's gown, and today the tea farmers still prepare Dragon Well leaves in the same shape! Sweeter than any other green tea and lighter in body, Dragon Well Green Tea is a distinct gourmet treasure!
Steeping instructions:
Amount of water: 6 oz
Amount of Tea: 1 Flat teaspoon
Water Temperature: 160° F
Steeping Time: 1-3 minutes.
Note: Do not use boiling water for Green and White teas as they will burn and create bitter flavors.
A good way to guess water temperature without a thermometer is to bring the water to a boil, and wait about 30 seconds (for White tea) or 60 seconds (for Green tea) before pouring over the leaves.
